Well, have I ever told you that I love summer? I wouldn´t mind living somewhere in a country where there is no winter like in Germany. As soon as the temperature is becoming higher and the sun is shining I am feeling just good. I love wearing summer skirts and dresses and to be outside as much as possible. I never mind the barbecues every evening and also ice cream in summer time I cannot have enough.

We do have some really good ice cream shops close by – even in our street – and every time I go there of course C also wants to have a try. I don´t mind her having something to eat with sugar from time to time but actually I would prefer a sugar free version. So I thought I give it a go and try to make one myself.

What you need:

  • bowl
  • blender
  • 6 silicon cupcake molds (I had them at home so I used those)
  • ice cream sticks (I used paper straws that I cut in half)
  • 200g yogurt
  • 1/2 banana
  • 100g strawberries
  • 6 small extra strawberries

Simply blend the yogurt with the banana and the 100g strawberries in the bowl. Chop now the extra strawberries that you kept aside and put them on the ground of the cupcake molds. After putting them in pour the yogurt mix on top until they are almost full and put one ice cream stick/ straw upright in the middle.

After leaving the filled molds for a few hours in the refrigerator you can enjoy the delicious popsicles in the summer sun. Depending on the temperature of the freezer you can take it out already after 1,5 hours. Tip: Let the ice cream defreeze about 10 minutes before eating it then it is softer and easier to enjoy.
