We are in the middle of the harvest season which means a highlight for baking lovers (except from Christmas).
My whole childhood I lived at the countryside and picking apples was one of our traditions. It’s actually one of my dearest childhood memories. Summer holidays were over, we went back to school and summer came to an end. But you still had those last warm days where you could feel autumn is around the corner. On these days we went to my grand parents, who had a huge garden, picking apples and pears in the old orchard. The best thing was of course the reward afterwards: apple pie!
Instead of picking apples myself this year, I went to the farmers market and bought like three kilos. I have planned to make apple puree (you can find the recipe here), apple pancakes, apple crumble (with vanilla ice cream of course) and the famous apple cake from my mom which I’m happy to share with you.
200 g unsalted butter
200 g caster sugar
1 sachet of vanilla sugar or 2 teaspoons pure vanilla extract
4-5 medium size apples, peeled and chopped
4 egg yolks
4 egg whites
250 g plain flower
2 teaspoons baking powder
75 g almond flour or almond meal
4 tablespoons (full fat) yoghurt
- Preheat the oven to 180 degrees Celsius.
- Grease a loaf pan with butter and line it with parchment paper.
- In a large mixing bowl, whisk together the butter, the sugar and the vanilla sugar. Stir until light and fluffy.
- Fold in the chopped apples.
- Add the egg yolks and yoghurt and mix well.
- Sift the flower with the baking powder and the almond flour and add to the bowl with the butter, sugar, apples and egg yolks. Whisk well, until the ingredients are combined.
- Beat the egg whites until they are loose and frothy.
- Gently fold the beaten egg whites into the batter.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake the cake for 50 to 60 minutes. If you insert a knife into the middle, it should come out clean.
- Let the cake cool down in the pan for 30 minutes.
- Unmold the cake onto a flat surface to cool completely.
- Then slice and serve.
