Recipe: Simple cauliflower soup with feta

Me and my family love to eat soup either as a starter or even as a main dish with some bread. As we don´t want to eat every time the same one I love to try new ones. I wanted to try myself in a cauliflower soup and I finally found a great recipe which I adjusted a bit. Admittedly I never liked cauliflower as a kid but I learned to like it the older I got and with this soup I can say for sure: I love it!

Ingredients (serves 4)

  • 850-1000g cauliflower
  • 250g feta
  • 1 liter vegetable stock
  • 1 small piece of ginger
  • bacon bits (optional)

Cut the cauliflower into smaller bits and cut the ginger into bigger bits. Cook both now about 15-20 minutes in the vegetable stock. Once the vegetables are soft enough, take the ginger out and mash the rest until it is one nice consistence. Afterwards put the chopped feta in and stir on low heat until it is completely melted. If you like a bit of extra taste roast the bacon in an extra pan without fat and put it on top while serving.
